Creamed Honey

Creamed honey is set to a smooth, spreadable texture rather than left runny, which the maker describes as distinctively creamy. It starts as Foragers Honey's wildflower honey, worked until it sets that way, and the result stays on the knife instead of running off it, which makes it the practical jar for toast, crumpets and school lunches.

It comes from the same family-operated beekeeping business at Barrabup, near Nannup, Western Australia, that keeps its hives at permanent sites across the South West rather than moving them with the seasons. The business says it uses no chemicals on its bees or hives, and takes only the honey the colony does not need, the same practice behind the rest of the range.

Keep a jar on the bench rather than in the cupboard, since a texture like this is easiest to use straight from a spoon.
