Truffle Hill
Truffle sea salt flakes are Western Australian sea salt worked through with the farm's own black truffle, so a pinch carries both the crunch of flake salt and the smell of truffle at once. Truffle Hill suggests keeping it for simple dishes, where there's nothing else competing for attention, and even finishing a scoop of vanilla ice-cream with it.
The truffle comes from the company's 52-hectare estate at Manjimup, planted in 1997 among the karri forests of the Southern Forests region, where trained dogs find the truffles each winter. Salt is one of the simplest ways the farm carries that truffle into an everyday kitchen, long after the harvest season has passed.
Keep the small jar by the stove for the last minute before serving: a pinch over eggs, chips or a plain steak, or that unlikely scoop of vanilla ice-cream.
