The Bakers Couverture Bar is Bahen & Co's chocolate made for the kitchen rather than the wrapper: a 70% cacao couverture meant for melting into brownies, ganache or a cake. The maker describes the heirloom cacao, sourced directly from farmers, as giving a complex aroma with notes of raspberry cream and citrus.
It is stone-ground on the Bahen family farm near Margaret River, Western Australia, on the same vintage machinery, a 1930s roaster and a melangeur from around 1910, used for the rest of the range. Jacqui and Josh Bahen say they work directly with cacao farmers, without intermediaries, and pay above Fair Trade pricing.
At 500g it is sized for a real bake, not a single batch of biscuits, so it suits anyone doing the Christmas baking or a birthday cake for a crowd.
