Gabriel Chocolate

This single-origin dark bar is made entirely from Peruvian cacao at 65 per cent, and Gabriel Chocolate's own tasting notes describe it as being like Christmas cake, with hints of dark fruit, cinnamon and nutmeg running through the chocolate. It won a Gold Medal and was named Crowd Favourite at the 2024 Perth Royal Food Awards.

Gabriel Chocolate makes it bean to bar at its factory in Metricup, Western Australia, sorting, roasting, winnowing and grinding the raw cacao itself rather than buying in ready-made chocolate. The company describes itself as the first in WA to work this way, and it sells its bars by origin rather than blending them, so a Peru bar and a Ghana bar from the same factory taste distinctly different.
