Uganda Milk

This is a single-origin milk chocolate made entirely from Ugandan cacao, sorted, roasted and refined at Gabriel Chocolate's own factory rather than bought in as ready-made couverture. Milk chocolate is usually blended for consistency, so tasting a single origin on its own is a different exercise: what you get is one place, one crop, without anything else mixed in to soften it.

Gabriel Chocolate makes it bean to bar at its factory in Metricup, Western Australia, describing itself as the first chocolate maker in the state to work from raw cacao rather than finished chocolate. Other milk bars in the range come from Peru, Ecuador and Madagascar, so the Uganda bar can be tasted alongside them to see how much the origin actually changes.

Keep a bar for someone who finds dark chocolate too much but still wants to taste where a chocolate comes from.
